Feb 13Smoked Oyster ConchiglieIngredients1 white onionA splash of olive oil 1 tin good quality Italian peeled plum tomatoesThyme (a few stalks, picked) Parsley (a handful, chopped)1 tin PYSCIS smoked oysters Sea salt & black pepper1. Sauté the onion in a little olive oil2. Chop the tomatoes and add to the pan with some of the juices3. Season with salt, pepper, thyme, and parsley and simmer for 10-15 minutes on a low heat4. Meanwhile cook the conchiglie pasta according to the package instructions5. At the end, mix the tin of smoked oysters into the tomato sauce together with the oil they're marinated in.6. Stir in some more of the chopped herbs for colour, then pour in cooked conchiglie.
